The fourth dialog of the Shipping Assistant is Pallet Detail. This is where you pack packages and loose items onto handling units such as skids, slips, or pallets. It works in a similar way to the Package Detail dialog.
If you do not want to see this dialog when using the Shipping Assistant, you can disable Pallet Detail by deselecting "Place items/packages onto pallets" in Setup > Freight Preferences > Shipping Assistant.
The top portion of this dialog shows items in a tree view. The tree view displays the Package Type and Quantity on the first level. Under that are line items with UOM (Unit of Measure). Listed below items are documents (i.e. orders) if Show By Order is checked.

When a row in the Packages to be shipped tree is selected, this field shows the unpalletized quantity and say Palletize. To palletize only some of the items, reduce this number. Then click the Palletize button.

When a row is selected in Palletized Items, the Unpalletize (up arrow) button appears. Click it to remove the Unpalletize Qty of items from this pallet or pallet group.
